A'Dair acorn emblem

Wine and oak have long been partners, shaping and protecting wine for centuries, whether through fermentation, maturation, or shielding vineyards from the wind. Domaine A'Dair® celebrates that long history and our name's association with the stately oak. Like acorn to oak and vine to wine, patience and craft are rooted in every bottle.

Chardonnay bottle

Chardonnay

Taste Profile

Ripe apple and stone fruit notes are woven together with supple oak spice and vanilla giving a smooth, creamy palate.

Winemaking

Chardonnay vineyards were selected for their long growing days followed by cool nights to develop complexity while maintaining acidity. The grapes are picked at optimum ripeness and fermented at cold temperatures to ensure concentrated aromas and flavors.

Pairing Suggestions

Tarragon Roast Chicken, Butternut Squash Ravioli, Camembert Cheese.

Cabernet Sauvignon bottle

Cabernet Sauvignon

Taste Profile

Expressive aromatics of black currant, red cherry and cedar augment a generous palate and full-bodied expression of Cabernet Sauvignon.

Winemaking

Vineyard sites were selected for their low fertility and long growing season leading to a intense bouquet of dark fruit. Maturation on oak provided further complexity and softened tannins.

Pairing Suggestions

Grilled Ribeye, Pasta Bolognese, Gouda.

Sauvignon Blanc bottle

Sauvignon Blanc

Taste Profile

Vibrant notes of grapefruit and white pear frame beautiful concentration and lead to a refreshing finish.

Winemaking

We carefully selected California vineyards moderated by cooling temperatures for Sauvignon Blanc grapes to properly develop their trademark aromatics. Early morning harvest and cooler fermentations protected the Sauvignon Blanc’s freshness and character.

Pairing Suggestions

Raw Oysters, Ceviche, Pesto Pasta, Chicken Piccata.

Pinot Noir bottle

Pinot Noir

Taste Profile

Cherry, raspberry and strawberry notes supported by lifting acidity and hints of oak-spice and warm earth, with a long smooth silky finish.

Winemaking

We searched specifically for low-fertility, well-draining soils to develop and protect the delicate Pinot Noir grape. These vineyards force the vines to concentrate on fruit development and allow for a longer hang time resulting in complex character.

Pairing Suggestions

Roasted Duck, Beet Salad with Goat Cheese, Grilled Salmon.

Pinot Grigio bottle

Pinot Grigio

Taste Profile

Vibrant white pear, melon and apricot aromas are accented by lemon blossom that evolve into a bright, refreshing palate and a clean, uplifting finish.

Winemaking

We sought out ideal vineyards with a dry, moderate growing season providing even ripening. Large diurnal shifts maintain bright acidity. Cooler fermentation temperatures maintain freshness and the delicate aromatics of Pinot Grigio.

Pairing Suggestions

Sushi, Shrimp Risotto, Caprese.
